Sushi rice

Rice: 2 kg (Japanese sushi rice)

Water: 2 liters and a quarter

Rice vinegar: 200 gm

Sugar: a tablespoon

How to prepare

Pour 2 kilos of Japanese sushi rice in a large bowl.

Wash the rice several times well until its water is clear.

Drain the rice from the water, then put it in a bowl.

Add 2 and a quart of water to it.

Boil the rice on low heat until it is almost done (about 20 minutes).

During the settlement period, put 200 grams of rice vinegar, then add a tablespoon of sugar and stir until the sugar is completely dissolved.

In a large bowl of bamboo or marble, wipe it with the mixture of vinegar and sugar that you have prepared, to prevent the rice from sticking to the bowl.

Place the rice in a large bowl and spread it evenly.

Add to the rice the remaining amount of the sugar-sweetened vinegar mixture.

Stir until the rice cools.
