Ingredients


Dough ingredients:


3 cups flour


1 egg


½ cup vegetable oil


½ cup of yogurt


1 teaspoon baking powder


2 tablespoons instant yeast


4 tablespoons of water


½ 1 teaspoon salt


½ 1 teaspoon sugar


Filling Ingredients:


1 eggplant


1 clove of garlic


½ cup ricotta cheese


¼ cup kashkaval cheese


2 tablespoons of olive oil


10 fresh basil leaves


½ teaspoon red pepper


½ 1 teaspoon salt


1 teaspoon black pepper


How to prepare


Sift the flour in a large bowl, add salt and baking powder, and mix the dry ingredients well


- In another bowl, add the yeast, water and sugar and mix them well, then leave the mixture for five minutes, then add the oil, yogurt and the egg and mix them well until they mix together


We add the flour to the mixture in batches until the amount of flour ends and a cohesive dough is formed


Leave the dough to rest for about an hour


- Extend the dough into a pyrex tray and let it rest for half an hour


- At this time, prepare the filling, after washing the eggplant well, cut it into thin long slices, rub with olive oil and sprinkle salt and black pepper on top


Put the ricotta cheese in a bowl and add the garlic after it has been mashed well and the red pepper and mix them well


Chop the fresh basil leaves and put half the amount on the ricotta cheese and mix them well


- Extend the dough in a circular motion and put it in a short-rimmed tray greased with a little oil and put it into the hot oven before on a medium temperature for 15 minutes


- After 15 minutes, take out the tray and spread the ricotta cheese mixture on the dough and half the eggplant slices and return it to the oven again for another 15 minutes


- Take the pizza from the oven and sprinkle the kashkaval cheese on top and return it to the oven for a few minutes until the cheese melts


Take out the eggplant pizza from the oven and sprinkle fresh basil leaves on top and it is ready to be served
